Homemade Mayonnaise

homemade-mayonnaiseMayonnaise or else mayo, is a thick creamy yellow to white color sauce or a dressing which is almost used in all the salads, sandwiches and burgers. Although these days most kitchens have a food processor, most of us still reach for the bottled mayonnaise. And that is too bad, because mayonnaise is something which is easy, fast and cheap to make at home in just few minutes. Homemade mayonnaise will not compromise the taste; in fact it would taste even better. But homemade mayonnaise will not keep for long. So you have to make small batches and use it up soon.

To the following mayonnaise recipe basic, you can add garlic, basil, tomato paste, pickle to make flavoured mayonnaise. I will advise you to use pasteurized egg yolks while making mayonnaise as to get rid of the bacteria salmonella which cause food poison. Enjoy making your own  fuss free mayonnaise with this recipe which yields about 2 cups.

Ingredients

  • 2 egg yolks
  • 1/2 tsp lemon juice
  • 1/2 tsp red wine vinegar (or any other type)
  • 1 1/2 cups vegetable oil (or olive oil)
  • Salt and pepper for taste

Method

  1. Put the egg yolks, lemon juice and vinegar in a food processor fitted with the metal blade.
  2. Add the half tsp salt and half tsp pepper.
  3. With the processor running, add the oil in a slow and steady stream through the hole in the cover. If the mayonnaise gets too thick, just add a bit of water.
  4. Now your homemade mayonnaise is ready and will keep for 3 to 4 days in the refrigerator.

    I agree! when making mayo from scratch is no big deal, then why buy it? the difference in flavor is enormous!
