
1 Using a vegetable peeler remove the zest from the lemon and cut it into fine shreds
2 Cut lemon in half and squeeze the juices in to large flat dish. Add half the zest strips and remaining marinade ingredients and mix well.
3 After mixing place the lamb legs in the marinade, ensuring that each steak is well coated.
4 Cover and marinade in the fridge for at least two hours.
5 To cook, drain the steak of excess marinade and place over a hot barbecue- 12 minutes for medium and 15 minutes for well done, turning and basting frequently. Sprinkle with chopped parsley and remaining lemon strips.

This is a great way to cook lamb. Wine sounds especially appealing. Must add nicely to the flavor of the lamb.
