Brown rice with chicken and mushrooms

Brown rice is rich in the bone-building mineral magnesium, the immune-boosting antioxidant selenium, and manganese, a mineral important for keeping up the body’s natural defenses.Brown rice is among the good fiber rich foods which bulk you up and make you feel fuller for longer. Thus ideal for dieting and losing weight. The mushrooms and satisfying whole grains make this chicken and rice dish ideal for dinner.

Ingredients

  • 1 pack sliced cremini mushrooms
  • 150g boned chicken
  • 2tsp chopped garlic
  • 1 and half cup brown rice
  • 1 cup white rice
  • 1tsp light soy sauce
  • 1tsp cornflour

Method

1 Rinse brown rice and soak in 2 cups of boiling water of boiling water for about 4 hours then drain.

2 Rinse and dice the chicken and then marinate with the soy sauce and cornflour.

4 Rinse white rice put into rice cooker together with the brown rice. Add 1tsp of oil and season with salt

5 Heat half tbsp of oil. Stir fry chopped garlic and chicken for a while. Add tomato and mushrooms, and srir fry well.

6 Add all the ingredients to the rice cooker when the brown rice is boiling and cook until the rice is done.

    I love rice…actually eat rice almost daily…this recipe sounds very good to me.

I registered it there long long time ago, but never thought about using it until recently…you know, the internet is full of the sites that we have no time to register, or registered, but got no time to visit…..and that’s why I don’t registered in twitter, because I really can’t take care of so many places….I even forgot about my facebook password……man…blogging is so addictive!

    Yet another way for me to enjoy rice. The way I eat rice I’m surprised I don;t have a paddy in my belly. Just can;t get enough of the stuff. Must be my caribbean heritage.
