Fishy Garlic Clams is simple, but yet a flavorful dish with its own liqueur.Before you start cooking the clams leave the clams to soak overnight in cold water and discard any with cracked or gaping shells and those which feel too heavy which is a sign that they are full of something other than live fish. It is alright for clams to open while you’re storing them, but throw out any clams that don’t close when tapped.Shellfish can stay fresh for as long as they can hold water in their shells. Also clams have a lot of health benefits.
Clams can be cooked in a number of ways, including steaming, boiling and frying. The best thing is that they don’t take very long to cook, usually only a few minutes which make it a perfect fuss free recipe.

1 In a non stick large sauce pan, heat the olive oil and fry the garlic, ginger and chillies for 2-3 minutes.
2 Pick over the clamps and rinse thoroughly. Add the shellfish, turn up the heat and cook for 5-6 minutes, till all the shells gape open in the steam.
4 After turn them with a spoon, so that the ones on top can get to the heat. When all are open remove the pan from the heat immediately. Otherwise they will get tough when it’s over cooked.
5 Finish off with freshly chopped parsley.

Since living in Germany, I haven’t seen many kinds of fish, not to mention clams!! And I ate lots of the juicy tasty clams (my mum made them as a soup, stir-fried with ginger and onion, etc. etc) when I still lived with my mum in China! Good old time is OVER.
