
1 First Devein the shrimps then blanch them in boiling water and remove the shell.
2 Remove the stalks from the tomatoes and remove the seeds.Rinse and dice the tomatoes.
3 Heat 2tbsp of oil. Stir fry the shrimps for about 30 seconds untouched on one side and do the other side.Remove from wok and place aside.
4 Sir fry half portion of diced spring onion untill it gets fragrant.Pour in the beaten egg and stir fry untill its semi-set. Add the cooked rice and cook untill the rice gets hot.
5 Add the tomatoes, shelled shrimps and season with salt and mix well.Put in the remaining spring onion and stir fry well. Your stir fried rice with tomatoes and shrimps are ready to be served.

I make stir fried rice often as a way to use up ingredients in my refrigerator. I love it- it’s simple, quick, economical and nothing goes to waste! Shrimp and tomatoes sounds great!

You wrote the magic words: rice and shrimp! When I saw the ketchup in the recipe, I immediately thought of different kinds that I’d like to try including a homemade version that I made from another blogger’s recipe as well as Filipino ‘banana ketchup’. Love it!

this is what my mom makes with leftover rice, too! I like the juicy pieces of shrimp in there…My mom uses crabmeat, the imitation kind, and fried fish cakes.
