Gourd mix with leeks

Gourd mix with leeks is a simple dish you can use as a side with rice or with some bread. Snake gourd is a vegetable which gives a lot of nutrients to our body, especially good for people having constipation. With few ingredients gourd mix with leeks is a delicious healthy dish you can prepare in maximum 20 minutes. Snake gourd is most popular in south and south east Asia. The recipe was forwarded to me by Alina, a friend of mine in Bangalore. Thank you Alina for the recipe !! Enjoy this healthy snake gourd mix with leeks with your family.

Ingredients

  • 1 large snack gourd skin peeled off and thinly sliced
  • 3 tbsp finely chopped leeks
  • 3 tbsp finely chopped onions
  • 2 clove garlic finely chopped
  • 3 dried chillies fried and chopped
  • 5-6 curry leaves and 1 piece ramp leaf
  • 1 tbsp olive oil
  • salt and pepper for taste

Method

1 Add 1 tbsp olive oil to a non stick pan and stir fry the chopped onions, leeks, garlic and dried chillies, curry leaves and ramp leaf until they turns golden brown color.

2Add the thinly sliced snack gourd to the mixture and mix well. Season with salt and pepper.

3 Cover the pan with a lid and cook on low heat for 10 minutes and serve with rice or bread.

    I had lots of snake gourd when I was still a child…they slowly vanished from the local markets, I miss those silky textured gourd.

    Gourd recipe! Now you don’t see that very often! I don’t like rice, but would love to try these with some steamed buns, or even on top of oats with a runny egg!

    this is kugua, correct? bitter gourd? I don’t think I’ve tried it yet, but I heard that girls in China go on a bitter gourd diet…whenever they’re hungry, they take a bite of a raw bitter gourd and hey presto! they lose their appetite! Sounds insane to me!

    fortunately, i don’t suffer from constipation but i would nevertheless enjoy this tasty dish. i love the appearance of it too!
