Perfect Pesto Mash Potatoes

Potatoes blend well with just about any main course. You can fry, boil or bake them but they are even better when mashed with some butter and milk to make really creamy mashed potatoes. This is a simple way to prepare and dress up plain mashed potatoes with a lovely green specked appearance

Ingredients

  • 675g floury potatoes
  • 4 tbsp of warm milk
  • 2 tbsp pesto sauce
  • some butter, black pepper and salt for taste

Method

1 Peel the potatoes and cut them into large chunks.

2 Place the chunks in a pan of salted boiling water and simmer for 15 to 20 minutes until completely tender.

3 Drain the pan and leave the potatoes over low heat for a couple of minutes, shaking the pan to drive off access moisture.

4 Remove the chunks from the pan and using a potato masher, mash the potatoes until smooth.

5 Add the milk and a large pat of butter and then season with sat and black pepper to taste.

6 Now to dress up the mash potatoes and the pesto sauce and stir till thoroughly combined.
