Red Cabbage Tomato Slaw

Red cabbage tomato slaw works well as an accompaniment for a main course. I personally love salads, what could be better than some nice crispy veggies on the side with your favorite rice dish. At times I prefer to sprinkle them on top of roasted burger patties. The idea of preparing a salad came to me last night as I lay on bed and I could not wait to get to the kitchen the next day to make it work.

I got home for lunch and I decided to prepare it since the red cabbage slaw recipe was simple and easy (after all its all about the chopping and slicing). It took me only 15 minutes to prepare or even less of your really good with your knife that is. In order to make the salad more colorful use different colors of tomatoes, and some white cabbages too. For this salad I used shredded cabbage and to make so, just cut the cabbage in to quarters and remove the hard canter. Then turn each slice in to its side and slice thinly lengthwise. To make the salad more hot just add some pitted sliced green or red chillies. This delicious salad worked perfectly as a side dish for me or you can have as a first course dish too.

Ingredients

  • 1 cup red cabbage, finely shredded against the grain
  • 3 tomatoes, cut into wedges
  • 1/2 cup coarsely grated carrots
  • 1 onion thinly sliced
  • Extra virgin olive oil
  • 2-3 tbsp torn basil leaves or mint leaves
  • Freshly ground-black pepper
  • 1 tbsp white wine vinegar
  • Salt for seasoning

Method

1 Add all the veggies into a large bowl.

2 Add a dash or two of extra-virgin olive oil and white vinegar.

3 Mix well while sprinkling the grounded black pepper. Once done, scatter with torn basil or mint leaves and season with salt. Red cabbage tomato slaw is now ready to serve.
