
1 Pour the stock into a pan and bring it almost to boil, Remove any large stalks from the watercress and add the watercress to the pan and simmer gently for 2 to 3 minutes, until tender.
2 Add butter into the pan and the shelled peas. Increase the heat to medium and simmer for 3-4 minutes, or until the peas become tender (if using frozen peas means it will take about 10 minutes).
4 Remove the pan from heat and pour the soup into a food processor and process to a smooth puree.
5 Return the smooth puree to the pan and bring back to boil. Add the milk and stir well. Taste and adjust seasoning. Your delicious creamy pea soup with watercress is ready to be served .
